Cheesy Sloppy Joe Sandwiches

These cheesy Sloppy Joe sandwiches are everything you love about the classic—savory, saucy beef piled into soft rolls, layered with melty cheddar and mozzarella, then baked until golden and bubbly. They’re an easy, comforting meal that’s perfect for busy weeknights, game day gatherings, or a cozy family dinner.

Ingredients

For the Filling

  • 2 lbs (900 g) lean ground beef
  • 1 tablespoon olive oil
  • 1 medium onion, finely diced
  • 3 garlic cloves, minced
  • 1 green bell pepper, finely diced (optional)
  • 2 tablespoons tomato paste
  • 1 cup tomato sauce
  • ¼ cup ketchup
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon yellow mustard
  • 2 tablespoons brown sugar
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon crushed red pepper flakes (optional)

For the Sandwiches

  • 6 large hoagie or sub rolls
  • 6 slices cheddar cheese
  • 2 cups shredded mozzarella cheese
  • 2 tablespoons melted butter
  • 1 teaspoon garlic powder
  • 1 teaspoon dried parsley

Instructions

Step 1: Cook the Beef

Heat the olive oil in a large skillet over medium-high heat. Add the diced onion and cook for 3–4 minutes, until soft and translucent. Stir in the garlic and cook for another minute, just until fragrant.

Add the ground beef and cook until it’s nicely browned, breaking it into small crumbles as it cooks. Drain any excess grease if needed.

Step 2: Make the Sloppy Joe Sauce

Reduce the heat to medium and stir in the tomato paste. Let it cook for about a minute to deepen the flavor.

Add the tomato sauce, ketchup, Worcestershire sauce, mustard, brown sugar, smoked paprika, onion powder, garlic powder, salt, black pepper, and crushed red pepper flakes, if using. Stir everything together and let the mixture simmer for 12–15 minutes, stirring occasionally, until the sauce is rich, thick, and coats the beef beautifully.

Step 3: Assemble the Sandwiches

Preheat your oven to 375°F (190°C).

Slice each hoagie roll lengthwise, leaving one side attached so the filling stays tucked inside. Place a slice of cheddar cheese into each roll, then generously spoon in the Sloppy Joe mixture. Finish with a hearty handful of shredded mozzarella on top.

Step 4: Bake

Arrange the sandwiches on a baking sheet.

In a small bowl, stir together the melted butter, garlic powder, and dried parsley. Brush the tops of the rolls with the garlic butter for extra flavor and a beautiful golden finish.

Bake for 10–12 minutes, or until the cheese is melted, bubbly, and irresistible. If you’d like an extra-crispy top, broil for 1–2 minutes, keeping a close eye on them.

Step 5: Serve

Let the sandwiches rest for about 2 minutes before serving. Then dig in while the cheese is still hot, gooey, and perfectly stretchy.

Tips

  • Add crispy bacon for an extra layer of smoky flavor.
  • Swap the cheddar for Pepper Jack if you’d like a little heat.
  • Lightly toast the rolls before filling them to help keep them from getting soggy.
  • Leftover Sloppy Joe filling keeps well in the refrigerator for up to 4 days or can be frozen for up to 3 months for an easy future meal.
