- 4 bone-in, skin-on chicken thighs
- 1 tablespoon olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 medium onion, thinly sliced
- 2 garlic cloves, minced
- 1 cup apple cider
- 2 sprigs fresh thyme
- ½ cup chicken broth
- 1 tablespoon Dijon mustard (optional)
- 1 tablespoon butter (optional, for a richer sauce)
- Fresh thyme leaves or chopped parsley, for garnish
Instructions
Step 1: Preheat the Oven
Preheat your oven to 375°F (190°C).
Pat the chicken thighs dry with paper towels and season both sides with the salt and black pepper.
Step 2: Sear the Chicken
Heat the olive oil in a large oven-safe skillet or Dutch oven over medium-high heat.
Place the chicken thighs skin-side down and cook for 5–7 minutes, until the skin is crisp and deeply golden brown. Flip the chicken and cook for another 2 minutes, then transfer it to a plate.

Reduce the heat to medium and add the sliced onion to the skillet. Cook for 4–5 minutes until softened and lightly caramelized.
