Ingredients
For the Crust
- 1½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 tablespoons granulated sugar
For the Filling
- 16 ounces cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs, room temperature
- 1 teaspoon vanilla extract
- ½ cup sour cream
- 1 cup chopped pecans, lightly toasted
Optional Topping
- ½ cup chopped toasted pecans
- Caramel sauce, for drizzling
- Whipped cream, for serving
Instructions
Step 1: Prepare the Crust
Preheat your oven to 325°F (163°C).
In a medium bowl, combine the graham cracker crumbs, melted butter, and 2 tablespoons of sugar until the mixture resembles wet sand.
Press the mixture firmly and evenly into the bottom of a 9-inch springform pan. Bake for 8–10 minutes, then remove from the oven and allow the crust to cool slightly while you prepare the filling.
Step 2: Make the Cheesecake Filling
In a large mixing bowl, beat the softened cream cheese until completely smooth and creamy.
Gradually add the sugar, mixing until well combined.
Add the eggs one at a time, beating on low speed after each addition just until incorporated. Avoid overmixing to help prevent cracks.
Mix in the vanilla extract and sour cream until smooth.
Gently fold in the toasted chopped pecans until evenly distributed throughout the batter.
Step 3: Assemble
Pour the cheesecake filling over the prepared crust and smooth the top with a spatula.
Tap the pan gently on the counter a few times to release any trapped air bubbles.
Step 4: Bake
Bake for 50–60 minutes, or until the edges are set and the center still has a slight jiggle.
Turn off the oven, crack the oven door slightly, and let the cheesecake cool inside for about 1 hour. This gradual cooling helps minimize cracking.
Step 5: Chill
Remove the cheesecake from the oven and let it cool completely at room temperature.
Cover and refrigerate for at least 4 hours, preferably overnight, to allow the cheesecake to fully set and develop its rich flavor.
Step 6: Serve
Before serving, top with extra toasted pecans, a drizzle of caramel sauce, and a dollop of whipped cream, if desired.
Slice with a sharp knife dipped in hot water, wiping the blade clean between cuts for beautifully smooth slices.
