Ingredients

  • 1 pound ground beef
  • 4 medium potatoes, diced
  • 1 cup shredded cheddar cheese (or your favorite melting cheese)
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 1 cup beef broth
  • 1 tablespoon olive oil
  • Salt and black pepper, to taste
  • Optional: 1 teaspoon fresh or dried thyme or rosemary for extra flavor

Instructions

Step 1: Sauté the Aromatics

Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook for 3–4 minutes, until softened. Stir in the garlic and cook for another 30 seconds, just until fragrant.

Step 2: Brown the Beef

Add the ground beef to the pot and cook, breaking it into crumbles with a wooden spoon, until fully browned. Drain any excess grease if needed.

Step 3: Cook the Potatoes

Stir in the diced potatoes and pour in the beef broth. Bring the mixture to a gentle simmer, then cover the pot and cook for 15–20 minutes, or until the potatoes are fork-tender.

Step 4: Add the Cheese

Reduce the heat to low and stir in the shredded cheese until it’s completely melted and creamy, coating the beef and potatoes evenly.

Step 5: Season and Serve

Taste and season with salt, black pepper, and fresh or dried herbs, if using. Serve hot and enjoy while the cheese is perfectly melted.

enjoy!
