Ingredients
- 1 pound ground chicken
- 1 cup shredded green cabbage
- 1 cup shredded carrots
- ½ cup chopped green onions
- 2 garlic cloves, minced
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil (optional)
- 1 teaspoon ground ginger
- ½ teaspoon onion powder
- Salt and black pepper, to taste
- 10–12 egg roll wrappers
- Vegetable oil, for frying
Optional Dipping Sauce
- Sweet chili sauce
- Soy sauce
- Spicy mayo
- Duck sauce
Instructions
Step 1: Cook the Chicken
Heat a large skillet over medium heat. Add the ground chicken and cook for 6–8 minutes, breaking it into small crumbles as it browns. If needed, drain any excess liquid.
Step 2: Add the Vegetables
Stir in the shredded cabbage, carrots, green onions, and garlic. Cook for 3–4 minutes, stirring frequently, until the vegetables begin to soften while still retaining a slight crunch.
Add the soy sauce, sesame oil (if using), ground ginger, onion powder, salt, and black pepper. Stir well and cook for another minute to blend the flavors.
Remove the skillet from the heat and let the filling cool for about 10 minutes.
Step 3: Roll the Egg Rolls
Lay an egg roll wrapper on a clean surface with one corner pointing toward you.
Spoon about 2–3 tablespoons of filling into the center. Fold the bottom corner over the filling, tuck in both sides, and roll tightly. Lightly moisten the top corner with water to seal the wrapper. Repeat with the remaining filling.
Step 4: Fry Until Crispy
Heat 2–3 inches of vegetable oil in a deep skillet or fryer to 350°F (175°C).
Working in batches, carefully fry the egg rolls for 3–4 minutes, turning occasionally, until they’re evenly golden brown and wonderfully crisp.
Transfer the cooked egg rolls to a paper towel-lined plate to drain any excess oil.
Step 5: Serve
Serve the egg rolls hot with sweet chili sauce, spicy mayo, soy sauce, or your favorite dipping sauce.
Tips
- Don’t overfill the wrappers to prevent them from bursting while frying.
- Keep the unused wrappers covered with a damp towel so they don’t dry out.
- For a lighter option, bake the egg rolls at 400°F (200°C) for 18–20 minutes, turning halfway through, or air fry them at 375°F (190°C) for 10–12 minutes until golden and crispy.
- Add finely diced bell peppers, mushrooms, or bean sprouts for extra flavor and texture.
- Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat in the oven or air fryer to restore their crispiness.
